It’s just layers of potato, onion, carrots and sliced corned beef. I don’t chop the potatoes up, I slice them into rounds and all the veg go into the casserole pot raw. About half a pint of stock, usually but not always beef stock, is poured over it all. It then gets shoved in the oven for a few hours until it’s cooked.
I’ve never put bacon or cheese in it, doesn’t need it in my opinion, but it’s one of those dishes which everyone adapts to suit. We have it with sliced pickled beetroot or pickled red cabbage.
