For more on marking an answer as the "Best Answer", please visit our FAQ.As it's illegal within the EU to buy or sell sunfish (and with the UK still being signed up to many EU fishing agreements), it's unlikely that many (any?) people here will have ever eaten what is classed by conservation bodies as a 'vulnerable' species.

The European Union (Withdrawal) Act 2018 incorporated many EU laws into UK ones, specifically so that they'd remain in place after Brexit. Further the UK has annual fishing negotiations with the EU, under the Trade and Cooperation Agreement, largely with the aim of furthering species conservation. It therefore remains illegal to buy or sell sunfish in the UK.

Fresh fillets Sun Fish or pan fish
1/4 litre of milk
6 ounces seasoned stuffing mix crushed
3Tablespoons melted butter
Method
Fresh Sunfish washed and dried
Dip into milk
coat with stuffing mix both sides
Spray a baking dish with Pam or coat with a better oil
Place coated sunfish into pan pour melted butter over fish
Bake to 220C degrees 10 to 12 minutes or until flaky
depending on how thick the fish are or leave in 40C sun for one hour.
You can top with a little lemon juice after baking
Serve with Ranch dressing on the side as to a Jordanian salad or as a dipping sauce.
