Red skinned potatoes. The white ones are pretty hopeless. Parboil for about 5 - 7 minutes, drain & rough up the skins with a fork. Put in fresh dripping, duck or goose fat preferably (or olive oil or lard) and cook until crispy
..I like to use King Edwards..par boil for 10 mins. drain and return to the saucepan and give a good shake to "rough up" the edges... heat up your prefered fat in a roasting tin BEFORE adding the spuds...gently drop the spuds in , sprinkle with sea salt and rosat in a hot oven , shaking the tin every now and again...
