What is the best way of cooking fish that are high in Omega-3 without losing their goodness?

If i have Mackerel fillets i either grill them of wrap in foil and oven bake them in butter and herbs.

I love whole trout done in foil and baked with butter.....can be done on the BBQ too....superb.
