What Can Be Done With Frozen Fresh Veg Thats Thawed & Gone Soggy?

I have a fault with my fridge & it occasionally freezes stuff not intended to be frozen - most things are not a problem - but it does it to my fresh veg

today i have a big bag of bell peppers - about 8, mixed colours.

Theyre all intact but completely 'squishy', and wouldn't be nice to eat raw obvs.

Any ideas what i could do with them?

I usually just chuck them if they're unusable as i intended but
wondered if there was something that can be made from them?

i thought maybe soup but would the texture be weird? Do they go nice?
if i sliced & added to say & curry or chilli etc would they be nice or just blend into mush?

can anything be done to them to turn them back into more 'usuable' veg?
roasting? microwaving?

I'm not very well, so dont want to go through a big rigmarole of blending, slicing, seasoning etc etc etc only to find its gross.

and how long do they last in this condition?
I assume they'll go off much quicker than fresh & dry etc?

Any ideas?

I'd just stick them in the freezer. They'll be fine for soups and stews.
Halve and seed them, bake or grill and remove the skins. Then they'll make a great soup or stew (as BM said). If you've cooked them, it's fine to refreeze.
As Barmaid says. I would use in bolgnese and even cottage or shepherd's pie.
Chop them up and bag in useable portion sizes before freezing
Almost all veg isn't nice to eat raw. Just find recipes you like that you can cook & freeze for later consumption.
Lots of veg is lovely raw, OG. Carrots, mushrooms, peppers, peas, celery, onions, cauliflower and of course salad veg
Not so. Definitely not any you have mentioned.
Generally speaking, food is for cooking then eating.
