What Cuisine Do You Find Highly Overrated?

Without a doubt, Italian - particularly pasta.
It's basically flour and water. However, if you go into an Italian restaurant you see a menu as big as the Daily Telegraph. But the pasta dishes (which usually make up a large chunk of the menu) consist of the same stuff but in different shapes (possibly six or seven). Multiply this by half a dozen different sauces and you have a list of 40 or 50 "different" dishes which are essentially all the same. Yes I've seen articles which explain why all these different shapes are necessary and how much they improve whatever their served with (usually a tomato-based sauce) and I don't buy it. Spaghetti is a ridiculous foodstuff. It should be produced, cooked and served in one inch lengths. It would make no difference to its taste and it would be infinitely easier to handle. And don't even start me off on pizza!
Shame really because my local family run Italian serves some very nice (non-pasta and non-pizza) food. But those places that concentrate on pasta and pizza are not worth a light.

Trouble is the versions you come across in the UK are often a million miles from their origins. I do find the tendency to hyper chilli traditional spicy food spoils what may originality been flavour dense, rather than so not your tastebuds switch off.
The other things are the differences between the food eaten by a countries elite and that consumed by working people. They can be so diffent.
I am pretty broad in my tastes but really not keen on raw fish and meat.
