I've got a fresh coconut. Can I freeze the milk?

Coconut milk itself is made by combining the pulp of coconut flesh with water to get to the creamy milk you can get in cans etc. This does freeze but not very well in large quantities as there is a lot of oil present that won't re-consitute very well with the pulp. Try it in an ice cube tray for easy to use portions if you do freeze it, and only keep for 1 month.

Why freeze it, if you don't actually open the coconut it will keep for ages at room temperature anyway, fresh unopened coconuts can be stored at room temperature for up to four months, depending on its original freshness when purchased. Grated fresh coconut should be put in a tightly sealed container or plastic bag and stored in the refrigerator for up to four days or frozen for up to six months.
