Lemon Meringue Pie

I have been using the Jamie Oliver's Sainsbury's Cookery Card. I've made the lemon meringue a couple of times and the lemon filling is thick when poured into pastry case. I put the meringue on the filling, cook it in oven and leave it to cool. After a couple of hours the lemon filling goes all watery, oozing out of pastry. The recipe is followed exactly. This has happened twice in a couple of weeks. What am I doing wrong? Any ideas?

At a guess I would say the leakage is caused by not totally enclosing the top with the meringue mixture. The meringue is the sealant so if there is even the smallest of gaps...out comes the filling. Another reason could be too much sugar in your meringue - this would also act with the meringue and cause ooziness.

I'm pretty sure the meringue was sealed as much as possible, and I measured the ingredients exactly as in the recipe. Trials will continue. Thanks for your help.
