Easy peasy! Soak some burghul (cracked wheat). Finely chop a bunch of parsley. De-seed a couple of tomatoes and chop finely. Also finely chop some spring onions (green onions) and mix it all together. Dress with some lemon juice, olive oil, salt and pepper. Some like tabouli with more burghul than parsley, but I prefer the parsley to be dominant.
I like my tabouli to have some additional ingredients! I start with about 3/4 cup fine bulgur, cook it or if I have the time just soak it for about 1 hour. Chop up 3 ripe tomatoes 1 small cucumber, 1small green pepper, 1 large bunch of parsley and one small bunch of scallions. Mix the bulgur into the cut up vegetables and add 1 bunch of chopped up fresh mint(very important for the tabouli taste). Add about 1/4 cup olive oil 1teaspoon vinegar and the fresh squeezed juice of 2 or 3 lemons, don't forget to salt to your own taste ( I like about 3 good shakes from my salt shaker.) (You can always add other fresh herbs that you might have fresh in your garden or herb pot). Enjoy, you'll feel like you are doing something good for your body.
