Presumably the blue in Danish Blue, Blue Vinny, etc. cheese is ok to eat.

Can the same be said for when bread or other live foods turn blue?

Cheese is made with non-toxic mould so it is very safe to eat, for most people.

The mould on bread may be toxic and in any case doesn't taste good.  It's fine to cut the mouldy bits off and eat the rest, if you're desperate
