For more on marking an answer as the "Best Answer", please visit our FAQ.My Gran used to cook tripe in a pan of milk or milk/water with butter and salt and pepper.The stock was then thickened into a sauce with grated cheese added.I have never bought it as I am sure my hubby would be horrified and refuse to go anywhere near it.I remember it being very nice cooked like that.

cook the tripe in milk and use the milk to make an onion sauce, put the tripe back in the sauce and serve with chips covered in loads of vinegar and lots and lots of bread and butter. my grandad used to make this when we visited him in merseyside and could never get in down south where i live. mmmmmmmmmmmm oh my god how lovely!!!!!!!!!

When I was at Cookery School, we used to make an italian tripe dish. You make a rich tomato sauce, loads of white wine and garlic, cut tripe into small squares, mix with the sauce and a good handful of parmesan cheese, then bake for a good hour and a half at about gas 5. About 20 minutes befoer serving, chuck on some more grated parmesan and some fine breadcrumbs and continue to bake until the top is crusty. It's tasty, and I quite used to like eating it, but I'd rather eat so many other things first!!
