packed lunches...any favourites??

My husband starts a new job tomorrow, and it's the first time in his career he's had to take a packed lunch!!!


As I'll be in charge of lunches (mine and his) I wondered if anyone had any favourites they could share....sandwich/tortilla fillings, pasta, rice...anything that won't spoil if made the night before.

Depends how healthy you want to be!! Some mixed nuts or oatcakes will stop him from being hungry for far longer than sugary things and bread. Bananas are amazing too! I think variety is the most important thing- having different stuff everyday. Cold sausages (I use veggie ones) are nice for a change. Try to avoid the packaged stuff...
Why not ask him what he wants or get him to make his own.

Oooo,the possibilities are endless. I take a packed lunch every day and its best to be a bit inventive as sandwiches have the potential to be very boring. I usually have a salad with lots of crunchy veg and tuna or feta cheese, or something left over from the night before (chicken, salmon, bacon, rice). Tins of mixed beans are good for a quick easy way to pad out salads, and if salad alone doesn't fill him up, pack some pittas or wraps to go with it. Then if you have time at the weekend make a batch of flapjacks (really quick, easy and cheap) and these are an excellent treat for tea break as the oats will keep you going for ages.

Corned beef 'n beetroot (or H.P. sauce) on some thickly sliced white bread with plenty of luvverly butter will definitely hit the spot.


Please ignore previous suggestions -if I got 'mixed beans,oats,feta cheese and bananas for my pack-up,I'd either fart for a fortnight or bin the lot and go large at McD's.


Oh, and by the way, I'd like my tea on the table as soon as I get home from work!

Just a thought-he's likely to get a bit peckish mid-morning-make sure that you include a pack of pork scratchings.They'll put some lead in his pencil-guaranteed!!

Oatcakes may not be as nice as a Big Mac, searchme, but I think thickym would quite like her husband to be around in a few years time. Corned beef, white bread, butter, and PORK SCRATCHINGS???! Bleeeaaargghh!!

The miners favourite Cheese and Jam, that keeps moist down the pit so you can make the night before no probs.


I know it sounds naff but you get fed up with everything after a while !

a tip is to butter the bread and wrap up - and then put all the fillings in separate little containers, or bags and he can assemble them himself - that way they won't get mushy and not nice the night before.


for snacks - a few crackers, cheese and pickled onions etc are good


also get some ice packs and freeze the night before and put into the box to keep the food fresh and cool throughout the day

Hi There, I really love making my husbands sarnies. He does like Falafel in pitta bread with red onions, lettuce and homemade guacamole.(advocado mashed with sour cream little salt and pepper and salsa from a jar) and a few cherry tomatoes! keeps him going till dinner......


You've missed a trick there missis. Get HIM to make them - and he can do yours while he's at it.

Yeah right! he leaves at 5.45am and gets back at 7.30pm, I can just imagine he'll starve or live on burgers! I need him alive to pay for my up keep!!!!!

my favorite sarnie filling is tuna, iceberg lettuce, grated carrot and mayonaise. Yum!! Fridge, here I come....
So am I. He's just got home and I've just been told I'm having scrambled egg and smoked salmon for breakfast as he's taken the day off...cool.........so, yes it goes both ways.

Thank you all for your lovely ideas......poor sod was so busy today he never got to eat his lovingly prepared wrap and apple and cinnamon muffin (homemade I must add!!).


I do love the sound of corned beef and beetroot though...full of artery clogging goodness and no mistake!


Cheese and jam........not sure but never say never....


Asciwhite...do you do a delivery service on your sandwiches? The falafel one sounds the nuts!


I like the idea of making flapjacks too....as Scarlett pointed out...I do want to try and keep it on the healthy side if I can.


I'm going to go for the tuna mayo and grated carrot as I have that to hand...but will shop in lunch break and try some of these ideas out.

Hi thickym! here's a pasta salad recipe that can be made the day before: we like to use pasta shells for this one and I do add olive oil whilst cooking pasta.


ingredients:


Pasta shells


1 red onion finely chopped


1 bunch spring onions chopped


2 celery sticks finely finely chopped or processed with....


6 or 8 radishes


12 cherry tomatoes cut in 1/2 or 1/4's


1/2 cucumber yep! finely chopped


1 red pepper(you can char grill this if you have the time)if not just chop it up....


1 jar of sun-dried tomatoes in oil (Sacla or Merchant Gourmet) if no Italian delis near by, cut into strips, all very messy!


one pack of feta cheese


cook pasta as to how you like it and then drain and rinse under cold water to cool.


Place in huge serving dish then add in all the above ingredients, and crumble in the feta cheese and drizzle/ pour the oil that the sun dried toms were in all over the dish. you can finish off with ground black pepper.


Lots of energy in this recipe!
