New knives

I if was to invest �400 in a set of new kitchen knives, would anyone recommend either the Global range, or the type 301 Porsche range ?


I'm tempted to go for the latter, as while they are ridiculously over-designed they do look absolutely beautiful.

Global are really good, but the best I have ever found are Japanese Ice Bear knives - and I have spent 25years in restaurant kitchens testing all sorts of knives

Guess where the steel for Porsche 301 knives comes from?.............Japan!!
Get Sabatier knives and choose each one individually to suit your needs, rather than buy a set which may contain knives you won't use.
Why pay that price for kitchen knives? Are you mad???

Which price?? The �400 is definitely excessive in my view, but the Ice Bear knives are 20-odd pounds each and that's not a lot for a superb instrument. Especially one that's laminated from three (visible) layers of metal!


I could spend �400 on a lot better things than knives!!!!!!!!!!!

I've got a mixture of Henckels and Wusthof Tridents - and wouldn't have anything else.


I tried Global's and didn't like the 'feel' - and that's probably the most important thing when buying knives, Andy008. You need to get your mits on some and actually hold them before deciding which to buy.
