galette compl�te
I would like to make a galette compl�te (savoury pancake with egg, cheese and ham). How does the egg cook? Do you crack the egg into the cooked galette whilst it is still in the pan and let the heat cook the egg?

The egg cooks on the base of the part cooked galette. Wait ti lthe cheese has melted and the white of the egg has set.
Read between the lines of terrible translation and you see that the galette (darn tasty things they are..try some of the other savoury versions - makes a nice change from crepes or pancakes and make sure you use the buckwheat for a stronger flavour) should have the egg cooked lightly in the middle of the galette which should have folded sides to make a pocket.
