I'm cooking dinner for a friend who I've not seen for ages and her fave food is chicken and ham pie but I'm not having much luck finding a recipe. Anyone got any ideas?

this is one i make, i make it for 4 people so if it just 2 of you obviously half the ingredients:

1lb Cooked Chicken-I use chicken breasts and cube them
1/2 pint Chicken stock
4oz Cooked Ham
8oz Puff Pastry
1 Onion
1/4 pint Milk
1/4 pint Single Cream
4oz Frozen Peas
1oz Butter
1 Egg
3 tbsp Plain Flour
Parsley
Salt & Black Pepper

Melt the butter and cook the chopped onion until soft.
Dice the chicken and ham.
Mix the chicken, ham, onions and peas in an ovenproof pie dish.
put the flour in a pot and gradually stir in the chicken stock.
Bring to the boil, stirring continuously and simmer until thickened.
Stir in the milk, cream, parsley, season and heat without boiling for 2 minutes.
Pour the sauce into the pie dish over the chicken and ham
Roll out the pastry on a floured surface, cut off a strip of pastry and place on the rim of the dish, moisten, then place the remaining pastry on top.
Trim the edges and press to seal.
Make a hole in the centre of the pastry to allow steam to escape.
Brush with beaten egg.
Bake at 190C; 375F: Gas 5 for 40 minutes, until the pastry is brown.

enjoy!!

as long as you can make pastry this is the easiest thing in the world- cook the ham and the chicken first. Blind bake the bottom of the pie for a few mins- chuck in the chopped up meat ( dont use thin sliced ham- get a small gammon joint) Bung the top on and bake it for 20 mins. Some people like a few peas chucked in- some like the meat in a white sauce- personal preference
Id just cheat and get one from Marks's :-)

bellasasha - you've copied that recipe from The Foody site...... own up pet!!
