Help! Veggie friend for dinner!

Hi! My veggie friend is coming to dinner soon and I'm desperate for ideas for something to feed her - the problem is she's allergic to onions! Please could someone suggest something nice and easy to cook for her? Many thanks.

how about a sundried tomato and goat cheese risotto.


Buy merchant gourmet dried, and rehydrate the tomatoes in warm water (reserve the water after rehydration) and then marinade them in extra virgin olive oil and fresh basil.


Whilst those are marinading, cook the risotto rice according to the instructions but use the reserved water from the tomatoes.


slice the goat cheese.


Fry some veggies off if using extra. ie: courgette and peppers and then mix all the cooked and marinaded ingredients together.


In a nice bowl, layer the rice mixture through with sliced cheese and top off with a final slice of goats cheese which can then be gently grilled until slightly golden and bubbly.


Drizzle over extra virgin olive oil with fresh basil.


Serve with a leafy salad.

This is just the right time for some Asparagus.


Or try a Mushroom Risotto.


Or spaghetti with a tomatoe sauce (just don't add onions).


All nice and easy!

Roast veg, with nice crusty bread. Cut veg into chunks, drizzle over some olive oil and season. Roast in oven for 40 mins. Use squash, carrots, parsnips, tomato, celeriac, beetroot etc.


Couscous salad - takes 4 mins. Make up the couscous and chop in tomato, mushroom, fresh chopped herbs, almonds, lemon zest, seasoning. Serve on bed of fresh salad leaves.


Asparagus in crepes. Make a light cheese sauce. Make a batter and cook crepes / thin pancakes. Steam or boil aspragus. Wrap 2 or 3 in a crepe, pour over cheese sauce and top with grated cheese. Put in oven for 5 mins. Serve with a nice fresh salad.


Potato and sweetcorn patties. Boil potato to just cooked. Cool and grate. Mix with sweetcorn and herbs. Form into rounds, flatten to a burger shape, dust with flour and fry to a crispy finish. Serve with veg.


I quite often fry mushrooms, onions and sweetcorn. Then add cream and serve it with tagliatelle.


You could add any veg you wanted. Not something you could have everyday if you are watching your weight but very nice all the same. Even my children eat this - and it is very difficult to find something they will eat without complaining about it!

forgot to mention that I also put in garlic!!

i had same proberlem a few weeks ago went to m and s fillet salmon new pots mange toute with watercress sauce went down great

I love M&S stuff but she's vegetarian - she doesn't eat fish. Thanks anyway.
Make a vegeatable lasagne using one medium sliced leek (soften in a little oil). Then add clove chopped garlic, one stick sliced celery, 3oz dried green lentils, 1 pt vegetable stock, tinned chopped tomatoes, 1 sliced courgette, 4 oz sliced mushrooms, 1tbspn tomato puree and some crushed coriander seeds. Cook together for 30 mins (until lentils cooked). In an oven proof dish put a layer of veg mixture, a layer of lasange sheets (non pre cook type),another layer of veg, another of lasagne and top with cheese sauce. Sprinkle with grated cheese and breadcrumbs, cook at 180c for 40 mins. Very tasty!
