Simply put the term starch is used to describe a biopolymer system comprising predominantly of two polysaccharides - amylose and amylopectin. The two polysaccarides are made of glucose monomers ....... Well thats wgat it says here .............. :-)

http://en.wikipedia.org/wiki/Starch tells you all. Complex carbohydrate that plants use to store glucose and will thicken sauces in cookery etc Used in chemical industry for various purposes, Follow the links for info.
Why do you want to know, Jojo? What's the context of your query? As your question is in food and drink section, just wondered if you were aware it's another term for carbohydrates in foods and drinks - so rice and spuds for example would be high in starch / carbs.
