Or if no good, sear a salmon fillet skin side down til crispy, (takes 3 mins) in hot butter, turn off heat, turn over fish and it will finish in the heat of the pan. Serve up with mash and veg of choice.
Pork fillet - cut into rounds, dust with flour and fry for 2 mins til just cooked. Chuck some cream and apple pieces into pan, season well, dash of white wine and reduce 'til a nice thick consistency. Put pork back into pan, heat through - don't leave for ages as it will go all tough - and serve on mash with side salad.
Duck breast - seal in a pan so skin is brown. Place on rack in hot oven for 10 -12 mins to finish and simply season. Serve on mash with a veg again. Keep the fat that comes from the meat as this can be used for cooking especially roast potato - best results ever, guaranteed.
