For more on marking an answer as the "Best Answer", please visit our FAQ.If you get the River Cottage Family Cookbook, there is a lovely reciepe in there for Banana Bread. It has dried apricots in it, and it's bloomin' lovely.
The book is quite pricey, but you could always stand in Tescos and write it down!!
It's got eggs, flour, banana, sultans, sugar, butter, baking powder in it as well as apricots. I could be missing something, but I don't think I am.
It's very nice.
Or you could alwys eat them on their own.
Lamb burgers!
Beat an egg and add a chopped small onion, 8 or so chopped dried apricots, 4 tablespoons pine nuts, a handful of dried breadcrumbs, a teaspoon of mild curry powder and about 500g of lamb mince. Mix it up well and form into rissoles or squish into burgers. Serve in pitta bread with tzatziki - delicious!
Haven't tried the River Cottage on e but here's my recipe for Banana bread:
55g butter or soft marg.
55g caster sugar
1 egg, beaten
55g white self raising flour
55g wholemeal self raising flour
1/2 tsp baking powder
1tsp groung ginger
2 bananas mashed with a little lemon juice
55g finely chopped dried apricots
Place all ingredients except apricots into a large bowl and beat together well. stir in apricots. Pour mixture into a lightly greased 450g/1lb loaf tin and bake at 180c/gas4 for 45 - 60 mins. or until well risen, golden brown and firm to touch. allow to cool in the tin for a few minutes before turning it out.

Try blitzing with dates sugar and lemon juice into a smooth paste and dusting with coconut for a sweet, or use in oat bars; anything Morroccan - tagines, bbq lamb, etc; in stuffing for poultry; blitz with bananas and ice cream and ice for a m/shake or smoothie; use in rice dishes like risottos and also nice with couscous.; use in a compote.
