Ice Cream Headache, or "brain freeze" to kids, comes within seconds of scoffing cold foods or drinks and peaks half a minute to a minute later. As many as a third of the population have felt its "stabbing or aching pain," usually midfrontal but sometimes in the eyes and teeth. This probably makes it the world's leading cause of head discomfort!

Various ICH researchers applied crushed ice to the roof of the mouth (palate) and found touch points which triggered head pain. Hot weather was necessary.

Since touching the back of the palate produces this "referred pain," avoiding such contact will eliminate symptoms, says Hulihan. Nobody's recommending giving up ice cream!!

so all I need to do then, is eat it with my mouth open and not let it touch the roof of my mouth? cheers!
eating icecream with your mouth open hmm! that would be interesting to see, watch out for wasps and flies though could be worse than the headache
If you feel the roof of your mouth with your tongue, and move it backward toward the throat, you'll feel the roof shift from hard to soft. The soft part is the 'soft pallette.' An ice cream headache means this is too cold. I find that leaving your tongue there warms it up quite well.
