I love a chilli jelly with lime made by EPC but can't seem to see it any more, I've tried different brands but can't seem to find that combination of sweet/tart with very hot chilli. Does anyone have any suggestions either of a commercially made product or a receipe for home-made?

Hi DM - have a try of the Devon Chili Farms' Chili and Apple jelly for a suggestion: http://www.southdevonchillifarm.co.uk/sauceshop.html Might do the job and a 'Taste of the West' winner to boot.

If you do want to make your own jelly (recipe based on US site suggestion):

6 Chiles (Hotness to your preference) note - take off the stems..
6 cups Sugar
1 1/2 cup Cider Vinegar
Cheesecloth
6 ounces liquid pectin
6 drops green or red food coloring (for green or red chiles)

Wash and mince chiles. Combine Chiles, sugar and vinegar in a large saucepan or kettle and boil mixture at high heat for 5 minutes. Pour boiled mixture through cheesecloth to remove seeds. Return mixture to saucepan or kettle.

Add Pectin and food coloring to mixture and boil for 1 minute. Skim off any foam that may have formed.

Pour mixture into hot, sterilized half pint canning jars. Seal according to manufacturer's directions.

Process jars in a boiling water bath for 5 minutes. Test seal when cooled.

Add about 1/3 cup lemon or lime juice after straining to add the citrus background. Variation with habeneros here: http://www.astray.com/recipes/?show=Jalapeno%20jelly-ch
