Good point, I would forget to do that....
Hi kathykate

Yes, you can......but they do tend to crumble very easily......not too much of a problem though, because various recipes call for just that....i.e. Eton Mess!!

...I used to work in a resteraunt and when I made "creme brule" I had tons of whites going spare, we used to freeze them until I had dozens and dozens, then I would have a meringue making frenzy.... they keep for ages( month or so) in airtight containers....
Meringues keep for ages in an airtight container.

best ever meringue recipe

3 ingredients Meringues, pint whipping cream, jar dulce de leche

line a 8"shallow cake tin with cling film and cover the bottom with crushed meringue.

Whip the cream spoon half over the meringue and freeze for 30 mins.( put rest of cream in fridge)

Cover the frozen meringue/cream mix with dulce de leche, sppon over the rest of the cream then cover with more crushed meringue, presing down firmly.

Freeze the whole lot, take out of freezer and put into fridge a couple of hours before you wish to serve,

Yummy

Fab stuff guys, I'm going to just stuff them in an airtight container for now, then make that great sounding recipe by alibobs. - now I need to post a new question - what's dulce de leche? haha! something of milk? I'm sure I can google that for an answer, and I bet Waitrose sell it.
Yes Waitrose do sell it - it's the toffee stuff you get in a banoffee pie. My local branch sell it with the cooking ingredients, some stores have it with the jam/honey.

An alternative is to boils a can of condensed milk for 3 hours - keep it covered at all times otherwise sticky ceilings! I used to do this and would say it's slightly superior but now use the dulce de leche as it is so much easier.

I promise you will love it!
I never knew you could freeze egg whites !!!! Daisy loves an egg yolk in the mornings, the white usually just goes down the sink. Now I know better. xx
