Its a term for the food that Jewish people eat. They have strict rules with their meat - they can't eat pork, or mix meat and dairy products, and no shell fish. They also can't eat anything that has chewed the cud and has a split or cloven hoof - such as horses. Also they won't eat birds of prey. Its very specific - as well as the way they prepare the food has strict guidelines. Hope this helps.
Take a look at ry http://www.ou.org/kosher/primer.html there is a wealth of information there on Jewish dietry law.
Kosher and Halal traditions hail back to pre-judaism basic hygiene[pork had trichinosis, etc.] In kosher kitchens, dairy and meat each need their own set of pots, pans, utensils and dishes. Can you find kosher food at a deli or in a special store, and serve it so that it doesn't look too out of place with the rest of the menu?
