cook as you would a duck yes but keep it elevated from the roasting dish as you will have to empty the dish from time to time as goose is an extremely fatty bird. you will be surprised at the amount of fat. make sure you keep all of the excess fat too, as the best roast potatoes in the world are done in goose fat. you can also keep the fat in the fridge for a while so superb roasties all the way!! good luck and enjoy
Ooh all that lovely goose dripping, still got some in my fridge from Easter - like twain says - lots of fat from the gander! Any time fat is required, cannot be better.
