The original dish is Beef Wellington and does not have a sauce. I have done a quick google search and found several recipes for Pork Wellington but they also do not appear to have a sauce. Take a look at http://www.google.com/search?hl=en&ie=ISO-8859-1&q

I would be traditional and recommend apple sauce if you're going to do pork wellington (must admit i've not heard of it but the idea sounds nice...)
Darth - apple sauce & pat? Not too sure about that combo (although now I think about it you always seem to get that sweet Cumberland sauce with pat these days).
having considered rcp, i don't think apple would go well with pate and i would be inclined to make a light gravy using vegetable or chicken stock
light gravy recipe: 1/3 pint water bring to boil, add either 1 vegetable stock cube or 1 chicken stock cube (or combination of both), and a little gravy browning (not gravy granules which have flavouring in them) for colour. Thicken using a couple of teaspoons of cornflour mixed firstly in a little cold water, then stirred well into the stock.
that wouldn't be burdalls gravy then?
