Easy curry recipe

I'm having freinds round next week and intend to make a curry, ie chicken/ beef madras, does anybody have a recipe which relatively simple to follow?

Fry some diced chicken breast in the spices of your choice. Add a tin of coconut milk and a tub of natural yoghurt. Add some curry paste (i used tikka masala). Add any fruit or veg (i used chopped onion, peppers, mushrooms and pineapple).
Simmer to reduce to a nice thick sauce then add a small carton of cream and reduce further.
I also added a squeeze of lemon juice, a few pinches of brown sugar to sweeten and some dried chillies for a little kick. Other spices i used were garam masala, cumin, ginger, tumeric, paprika and garlic. A generous handful of fresh, chopped coriander leaves at the end gives it that lovely tangy taste
It was gorgeous.
Don't forget that a curry is just a flavoured cassarole. You can do them in a slow cooker and use tough meats such as mutton. You can also add what veg/fruit you like.
