hi has anyone got a link for a fool proof recipe for choc muffins?(im a rubbish cook!) and i know it sounds silly but when it says "flour" which type of flour is it? thanks xxxx

don't have alink but if a recipe just says flour it is generally means plain flour, a recipe for muffins will usually need self-raising (S.R.)
Muffins always need sr flour, but much more important is not to overmix the mixture, just fold the flour in really gently and leave it looking lumpy when it goes in to the cases.
Mix the dough and cook. Easy. Get all the ingredients at any decent store, and gorge out on these - you don't have to share them by the way - except for on here of course,hen.........or we'll track you down........

125g plain chocolate - get the best with a high cocoa content.
50g of cocoa powder
225g self-raising flour
5ml baking powder
125g of plain chocolate drops
50g dark brown soft sugar
225ml of milk
60ml sunflower oil
5ml vanilla essence
and
1 large egg

Preheat the oven to 220 C

Line a 12 muffin baking tray / tin with paper cases or butter it thoroughly to prevent dough sticking.

Melt the chocolate (break into bits and place in a bowl over a pan of just boiling water. Stir, and the choc will melt easily. This is a bain marie, and uses the heat of the water to melt the choc.)

Remove from the heat and beat in all the remaining ingredients, beating thoroughly together.

Spoon the mixture into the 12 paper cases / tray and bake in the preheated oven for 15-20 mins until well risen and firm to the touch.

Remove from oven, cool on a rack and stuff ypourself - have with strawberries and thick cream; with creme fraiche mixed with orange liqueur; with redcurrants and raspberries; with cream just poured over and guzzle while still warm; with mascarpone and cherry brandy mixed in..........

Now, off to the kitchen with you and don't come out til you've baked three lots at least.....no such thing as a rubbish cook by the way - only unappreciative guests.....Once you've got the above off to a tee, there are variations that add bluebeeries, white choc, nuts and so on, so have fun..!

I make this recipe all the time and its so quick and easy (and most importantly tastes fab!). It's for mini muffins, but if you use a full size tin, you'll end up with half the number of muffins. I don't usually bother with the topping as they taste great without it. Happy baking!
