does anyone know of any easy healthy quick recipes

Fry chopped onion/garlic/chillies. Add small chopped pieces of carrot if you like it.
Add 2 tins of chopped tomatoes or bruscetta. Add a dollop of tomato puree. Simmer for 20 mins so it starts to look more like a sauce than tinned tomatoes.
Add 2 tins of mixed beans/chick peas- whatever type you like.
Simmer and stir. Make sure carrot is not too crunchy.
I then leave it on the stove to thicken up for a while, and eat later. You can have it with green salad or rice if you are really hungry!
