Just wondering, what is the best way to store apples over the winter if you are not stewing and freezing them?

If they are kept in a cool frost free place they should last well.
You could beg some wooden crates from a greengrocer or lay them in seed trays.Make sure none of them are bruised before you store them.

As usual, shaneystar has covered just about all the essentials... however, I would add that some varieties of apples won't store very well, no matter the effort one takes, while others store very well if some care is taken and a cool place is available... Research the kinds you have at hand. Usually, the tart ones recommended for cooking store the best while the sweeter ones such as the Delicious don't cook or store well because of the higher sugar content...
