Interesting sandwich fillers?

Holidays are here and i now have to get some summer work ..... but i get so bored of the lunches i end up taking ... any suggestions anyone? It could be sandwich fillings, different salads, pasta salads, rice salads or any interesting nibbles?! Cheers T x

Scotch eggs, Primula tube cheese on wholemeal bread with wafer thin turkey slices, chicken sandwiches are the nation's favorite, after a survey. Or; get a 400g oval granary loaf, fresh-baked, warm from Asda, rip the end off, dig out the middle, feed it to the ducks if your on a riverside walk, smear inside with butter, [not the duck] place in a polythene bag, [not the duck, the duck stays on the river], go to local chip shop get your duck out, loaf out, and fill it up with fish and chips, add loadsa salt n vinegar, Eat. ; yummo. :-)
you can''t beat peanut butter and marmite sandwiches, or if you've got a grill [as opposed to a toaster], do two slices of toast, butter and put marmalade on it, replace under the grill, when it's bubbling, remove put sliced cheese on top [Lidl's emmenthal is brill for this & cheap] return under grill to melt & brown cheese. Don't eat it too quick as it's kinot.
Get some of those long sweet red peppers and whenyou cook your evening meal the night before, bung them in the oven on a baking tray for 15 mins at 180Cish. Save one and chop it up when it's cold and put in a sandwich with feta cheese.Mmmmm. They are also fantastic chopped into a pack of cooked noodles (you can get the best ones from a chinese grocers - we occasionally buy a whole boxful from Chinatown).
Hi Tizzy. I used to have the same problem, looking for interest and variety. Here's a few suggestions. Vary the bread you use with your fav fillings, e.g. tomato & pepper bread, cheese & chive bread etc. You can stuff pitta bread with just about anything. I love roast beef with crunchy peanut butter and thinly sliced carrot. Another is mussels (or, cockles) with red peppers & lettuce (or, cabbage) with a french mustard, lemon & honey dressing. To get loads of ideas I have bought cheap books on salads, snacks & sarnies from 2nd hand bookshops & car boot sales. They all help to encourage your imagination to run riot with foody ideas. I often take a salad made with anything I can find in the kitchen and carried in a plastic box. Happy eating !
One of my favourite lunches is also a really good way to use up any left-over rice from the night before! Just open up a tin of tuna, mix with some mayo, vinegar, plenty of cracked black pepper and a sprinkling of salt - stir well then add in the rice. I usually chop in some green pepper or some cucumber for colour and crunch. To liven things up can always stir in some tabasco. Enjoy!
dont take the pXXs cos of who its by but Jamie oliver does a pasta salad in one of his books that is truly out of this world. My current wife makes it for our 20 month old and she wolfs it down, mostly cos of the sliced black olives ( Waitrose spanish in brine ) and cos the dressing is great too. its very simple to do and you will never want to stop eating it. honest !
