What to cook

Hi everyone I'm home alone for the next couple of weeks and don't cook often. Can anyone suggest some meals which I could do that are not so time consuming to make? Nothing involving pasta or red meat please. Cheers!

Salmon salad
How about a big pot of vegetable stew ? All your fav. vegs in there, plus red lentils. You could serve this up with rice one night, with couscous another, tortillas a third night, naan bread on the fourth etc, tatties on the fifth. I almost suggested pasta on the sixth but you said no pasta, so how about cracked wheat ?
Risotto?

Heat some oil in a pan and add rice until it is a little glassy.
Add stock (one cup per cup of rice), and any vegetables you feel like. (I love mushrooms, onions, tomatoes).
Boil for about 25-30 minutes.
If necessary add more water.
Add grated cheese, pepper and salt, stir and serve.
