stuffed aubergines

does anybody have a qiuick and easy recipe for stuffed aubergines using something like minced beef rice onions etc..this is the best bit.bought aubergines by mistake and don't want to waste it

Yum yum stuffed with cous cous either packet or home made. Also try with a chilli sauce and cheese in it or make a moussaka perhaps.

Just sliced with some good EV olive oil drizzled over it and grilled on both sides.... yum
