Do green, red, yellow, orange peppers also come from the same seed/plant? If so how come we never see them in the 'ripening' stages?

There are hundreds of different types of pepper. Some grow to a specific colour others change colour as they ripen. The bell peppers most commonly found in supermarkets have a number of varieties some of which are colour specific. Some will change from green (immature) to orange or red (ripe) others may go through a number of colour changes from green to yellow then orange and finally red. Try leaving a green pepper in a sunny place and watch the result.
