Also called Ammonium carbonate or powdered baking ammonia. We use it for biscuits, but our usual suplier has stopped taking it in and we're at a complete loss as to where buy it from. I tried a company called Chance and Hunt online, but they only supply in massive amounts and currently we only require about 12kg at a time. Any help would be greatly appreciated. Oh - and we're in the north east of scotland - just incase that makes a difference...

Not sure if these people sell food grade Ammonium Bicarbonate but they do seem to sell it in small amounts (500g and 2.5 kg)

As you say, everywhere else seems to start at 25 kg minimum
(BASF, Yara etc)
I found it for you on the internet - on this website click on ingredients and they have it:

Baker's Ammonia
Pure powdered ammonium carbonate is the leavening of Grandma's cookies. Now you can use those recipes too. Recipes included.
617138 Baker's Ammonia, 3 oz. $ 3.49
617150 Baker's Ammonia, 10.75 oz. 8.79

I also found this:

Go to any "Greek", Italian or any other ethnic bakery. Ask if you can buy a small quantity, about 100 - 200 grams, about 1 cup or so. Either ingredient should not cost more than $3.00 - $5.00.

Thanks - both of you, but I really need a UK based supplier..
Until you are able to find one - perhaps you could:

Well, there are no greek or ethnic bakery's here.

We're a scottish bakery and can't get any suppliers...so that doesn't help either.
IS IT A UK BASED SUPPLIER YOU NEED AND NOT A US BASED SUPPLIER?

Sorry just noticed I was shouting there.

Have you thought about getting in touch with any other independent Scottish based bakeries cos they might be experiencing the same problem.

Question Author
hee hee Drislgirl...Now how did you realise I was looking for a UK based supplier...?? ;)

There's an idea...unfortunately noone around us makes the same traditional style biscuts we do. It' a dying trade, sadly. My dads been asking around to no avail...even our supplier is doing so! :-S

Oooh my keyboards playing up!

Snap - now that we know you ARE a bakery - if I were in your position I would keep calling other bakeries and ask them where they were getting their's. Have they decided it is not a safe product anymore or why is it getting so scarce in your part of the world? I live in the USA and had never heard of it until I read your question.

I'm not a bakery, I'm a lovely little boy! :D

But the point is - noone is making those biscuits nearby - there are only 4 bakery suppliers in scotland and none of the suppliers are supplying the stuff anymore.

I think I'll need to give up on this one and look elsewhere!

Cheers ma dears!
