Ammonium Bicarbonate

Also called Ammonium carbonate or powdered baking ammonia. We use it for biscuits, but our usual suplier has stopped taking it in and we're at a complete loss as to where buy it from. I tried a company called Chance and Hunt online, but they only supply in massive amounts and currently we only require about 12kg at a time. Any help would be greatly appreciated. Oh - and we're in the north east of scotland - just incase that makes a difference...

As you say, everywhere else seems to start at 25 kg minimum

Go to any "Greek", Italian or any other ethnic bakery. Ask if you can buy a small quantity, about 100 - 200 grams, about 1 cup or so. Either ingredient should not cost more than $3.00 - $5.00.

There's an idea...unfortunately noone around us makes the same traditional style biscuts we do. It' a dying trade, sadly. My dads been asking around to no avail...even our supplier is doing so! :-S

Snap - now that we know you ARE a bakery - if I were in your position I would keep calling other bakeries and ask them where they were getting their's. Have they decided it is not a safe product anymore or why is it getting so scarce in your part of the world? I live in the USA and had never heard of it until I read your question.
