Does anyone have a good recipe for thick chicken soup made with breast meat instead of bones? Like the stuff you get in sandwich shops? I live alone so couldnt eat a whole chicken and was wondering if i could make some with chicken breast instead?

chop your chicken breast and fry it gently in a nonstick pan with minimum oil.Add a chopped leek and cook until chicken is nearly cooked and leek soft.Add abouthalf a pint of water or stock and a small tin of haricot beans or chick pease if you like them.Simmer gently for about fifteen to twenty minutes ajusting thickness to your personal taste and enjoy

I live alone too and this is a quick creamy chicken/turkey soup I make sometimes.
A can of Campbell's Cream of Chicken Soup - add chopped or torn leftover chicken or turkey - rosemary to taste - I like to put some frozen green peas in mine - but you might like frozen mixed vegetables or whatever your fav is. Heat it thru in the microwave or a saucepan and you have dinner!!!
