Heston Blumenthal tonight

He is seeking perfection in fish and chips tonight. I can't wait to see what he's going to do; what potatos and fish will he use, what temperature and for how long will he cook the fish, will he double cook the chips for that extra crispiness, will he use beer batter? My mouth is salivating while I type this. Mmmmmmm, can't wait.

For more on marking an answer as the "Best Answer", please visit our FAQ.don't get me wrong, heston runs the 2nd best resturant in the world, and is an exceptional chef and perfectionist, but i feel alot of his findings were what people have known for years, like beer batter, chips are always best double cooked (yes he did it three times) also, soda water is good to add to batter, so is whisked egg white for extra crispyness, as for fish turbot is excellent then so is bass and also whiting if large enough and halibut, but for us its a matter of cost, except whiting, also maris pipers and desiree are superb chippers, alot of things are down to personal taste. also i prefer me chips big and slighty soft and am not a lover of masses of crispy batter, lastly i was a bit miffed he did not consider what oil to cook with i prefer corn oil for fish but 50/50 oil and beef dripping for chips

I have to agree Curly, Blumenthal is a terrific chef, but when it came to the fish and chips he didn't seem to produce anything we didn't know already. I'm not sure I could go for some of the things he has on the menu at The Fat Duck though...seems a bit far fetched, and way out of my price range anyway.

I've been around the UK a lot, and by far the best fish and chips I've ever tasted was in Dundee, I'll look up the name of the chippy later.
