Small Christmas cake recipe

I would like to make my own Christmas cake but I'm the only one that eats it. Does anyone have a recipe for a small cake or can I simply quarter a large cake recipe?

Just do 4ozs brown sugar,butter,flour,mixed fruit.1oz ground almond,1 oz whole almonds,1oz glace cherries, 1oz mixed peel 1/2 teasp mixed spice. 2 eggs, 1 tablsp brandy

Thanks Pea Pod, I'll give it a try. Can you advise cooking time because my 'big cake' recipe give 6 hours cooking time at 140. Thanks again!

If it's just for you, why not get a small rich fruit cake from the likes of Tesco, some roll-on marzipan, and icing, and do a DIY? It'll save you a lot of trouble, and the results will be guaranteed!

I've found Delia's website has been great for christmas cake recipes, and if I remember corrrectly there's a few different sizes on there (along with guidelines for cooking times).
If you can't get a reduced size recipe, why not make the full one, then cut it down into quarters and marzipan and ice and give as presents.
I do this each year as we could never finish a full one. The two sets of parents certainly enjoy their quarter and once the cake is iced you'd never guess it hadn't been made especially for them!

I once tried baking a small fruit cake for a little girl's birthday party and unfortunately it was too dry. I bake a cake one Xmas and cut it in two and keep the other half in the freezer for the next one.

I use Delia Smith's recipe every year to make small cakes to give as gifts, they are always lovely and moist, I think the smallest is about a 6 inch, Good Luck, have a Happy Christmas!
