buffet ideas

Has anybody got any ideas on what buffet food I could serve up on Boxing day? I can't really afford to spend loads but I am sick of sausage rolls, etc.
Any suggestions welcome!

224 g cream cheese, softened
4 green onions, finely chopped
60 ml salsa
115 g shredded Cheddar cheese
10 (10 inch) flour tortillas
Optional: Chopped Ham,Turkey or Chicken
In a medium bowl, mix together the cream cheese, green onions, salsa and Cheddar cheese. Spread the cream cheese mixture on the tortillas. Roll the tortillas and refrigerate about 4 hours before slicing into 1 inch long pieces.
Spicy Tortilla Rollups
224 g cream cheese, softened
56 g chopped black olives
112 g diced green chiles
112 g sliced pimento peppers, drained
30 g green onions, minced
45 ml hot pepper sauce
9 g chopped fresh cilantro
720 g flour tortillas
In a medium-size mixing bowl, combine cream cheese, olives, chiles, pimentos, green onions, hot sauce and fresh cilantro. Spread the mixture onto tortillas. Roll the tortillas up and refrigerate for at least 1 hour.
Slice the roll ups and serve.
Prosciutto & Parmesan Pinwheels
1 (17.5 ounce) package frozen puff pastry sheets, thawed
140 g prosciutto, thinly sliced
140 g Parmesan cheese, thinly sliced
10 ml prepared mustard
Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with nonstick oil spray. Roll the thawed pastry out onto a flat surface. Spread Dijon mustard to taste on the pastry sheets. Cover pastry with a layer of prosciutto, then cheese. Roll the sheets, beginning at the long side. Cut into 1 inch thick sections. Arrange the sections on the prepared baking sheet. Bake 10 to 12 minutes.

Makes:7 1/2 dozen appetizers
3 cups Original Bisquick� mix
1 pound bulk pork sausage
4 cups shredded Cheddar cheese (16 ounces)
1/2 cup grated Parmesan cheese
1/2 cup milk
1/2 teaspoon dried rosemary leaves
1/2 teaspoon parsley flakes
Barbecue sauce or chili sauce, if desired
1. Heat oven to 350�F. Lightly grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x2x1 inch.
2. Stir together all ingredients, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
3. Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with sauce for dipping.

Want to make these savory cheese balls ahead? Your options are many! You can:
Cover and refrigerate unbaked balls up to 24 hours. Bake as directed.
Cover and freeze unbaked balls up to 1 month. Heat oven to 350�F. Place frozen balls on ungreased cookie sheet. Bake 25 to 30 minutes or until brown.
Bake as directed; cover and freeze up to 1 month. Heat oven to 350�F. Place frozen balls on ungreased cookie sheet. Bake 10 to 12 minutes or until heated through.

As many cans of Cream of Chicken Soup as you want to fill up whatever size pan you want to make it in.
Add leftover cut up chicken/turkey.
Optional: As many cans of Veg-All or frozen vegetables as you think it needs.
Frozen green peas.
Add minced onion flakes � to taste.
Add rosemary � crushed up � to taste.
Mix together and either put in a baking pan or keep in the fridge overnight.
Spread it in a baking pan � I use the rectangular ones.
You can then use frozen biscuits/canned biscuits or mix up biscuits.
If you use the frozen/canned � just place them around on top and bake it in the oven until the biscuits get done.
If you mix up biscuits, just spread the dough out on top of it and bake it that way. These are the Southern USA biscuits - not sweet - I will add an easy recipe at the end of this recipe. You can also use puff pastry from your frozen food section at the supermarket.
(You can even heat this stuff in a saucepan and then put it in a casserole dish and put leftover biscuits on top of it.)

Stir in 8 Ounces Whipping Cream (Not Heavy Cream)
just until the flour gets wet.
Just dump it out on some flour and pat them out and cut them out.
Bake 400 - 450 until brown.
