Does anyone have a good vegetarian slow cooker soup recipe? I am making split pea soup now, and would love more ideas. Thanks!

ive used a slow cooker for years but never used a recipe for anything! i find whatever i chuck in is wonderful. for a veg soup i would use: swede, carrot, onion, celery, turnip, tin of tomatoes maybe, handful frozen peas. anything i have in really. Add some herbs and garlic, vege stock cube and thicken with cornflour. cut everything to a similar size and leave on while at work then hey presto. may be left chunky or blended and you can spoon in some cream when serving for something bit more special or add dumplings for kinda vege casserole! the variations are endless.

Thanks, BusyBee!
I just got the slow cooker as a gift... I think I'm gonna have fun with this!!
im sure you will - i wouldnt be without mine. i cook ALL meat in it, never in oven or saucepan. when cooking a joint of meat or whole chicken i never add water (something which often gets asked) as there's always plenty of stock as it cooks. As i said before just chuck anything in - quite literally!! It never fails! Enjoy.
Hi I make a good veg soup with red lentils, carrot, leeks, celery and a drained tin of butter beans ,veg stock. Stir in a good tablespoon of creme fresh before serving.

Mmmm, sounds good. I am not a huge lentil fan, but I may just have to try that. Thanks, pussnboots!
