I cooked boneless chicken fillet. Chopped into bite size pieces
1 cox or orange pippin apple finely diced (or similar - a good flavoured one not golden delicious or granny smith)
Handful sultanas
small red onion very finely diced
some ground almond - about 3 tsps
I - 2 tsp tikka or curry paste (Pataks or similar)
Mayo.
Mix it all up
Sprinkle with flaked almond.
