Cut potatoes and sweet potatoes into small cubes and boil until just soft ( won't take long with small bits).
Chop up other ingredients and fry in large fry pan, add potato. Whisk eggs with s&p and some herbs. Add to pan, stir around and cook until set. If necessary put under grill to cook top. Lovely spanish omelette, or fritata. As I like hot food I would add some pepper sauce eg Tabasco
OR chop all the veg into large pieces, put into baking or roasting tin with garlic and herbs and splash over some olive oil. Mix well to coat all with oil. Roast at gas mark 5 until tender, stirring often. Wonderful roast veg, known as briam in Greece. Eat on its own or as side dish with something else.
