Thanks for the reference "rinkytink"...while it does not provide the recipes I was looking for I was pleasantly surprised at the commercial availability of country wines in the UK...I am located in Quebec, Canada where country wines are still not too popular and difficult to find....I'll keep searching....Thanks again.

Jack Keller has a large collection of recipes for wines made from other than grapes (and also non-vitis vinifera grapes) and he invites contributions. see http://winemaking.jackkeller.net/index.asp
experiment! a generic recipe: boil whatever it is in just enough water to float it. strain. add 1lb of sugar for every pint of water. add yeast when it gets to blood heat. leave somewhere warm tilll the fizzing stops. bottle. this works for most fruits, flowers (roses annd elderflower) some spices (ginger and galangal. other spices seem to kill the yeast) and bizzare things like rhubarb or nettle. Just have fun.
