I made a curry last night and the recipe stated to use 2 spoonfuls of curry powder. The only curry powder I had was medium curry powder so i used that.
However although it was nice the curry was too hot! Next time should i cut down the amount of curry powder used, or use the same amount but a mild powder?

For more on marking an answer as the "Best Answer", please visit our FAQ.You know its a good idea to replace curry power by buying cumin, corriander, garam masala and tumeric power. Even better to to buy cumin and corriander seeds, which you burn and then grind into a pulp. Once you have added this spices, use proper chillies (red or green depending on personal taste) and this should give you more control over the spice as well as a better taste.
If you like Indian food, get a decent Indian cook Book, Madhur Jaffery is a good one for a start. Get the spices and start from scratch, If you are not used to spicy food go easy on the chili powder/cayenne pepper. It comes out better than just putting curry powder in even if is a bit of a mess on. Our Friday nights are Curry nights and sometimes I start on Wednesday to get the dish I want.
