Neighbours coming to dinner on Saturday evening. I need a recipe for a dessert. Starting with easy Crab souffles then Lamb. Would like something fruity. Any suggestions?? Please bear in mind I am not a good cook. Doris

toffee peaches- get a box of unripe peaches from your supermarket, cut in half, remove the stones. Thickly butter the base of a 7 inch quiche dish, and cover with demerara sugar to a depth of 1/4 inch. spnrinkle with cinnamon. place the peach halves face down on this. sprinkle a quarter glass of wine over the sugar. cook at 150 c untikll the peaches are soft and the sugar has dissolved in the juice. serve with single cream. Alternatively a lemon jelly with green grapes in it is always fun. shades of childhood.

Easy Orange Fool: Ings:200mls Double Cream, 200 mls Orange Juice (fresh or carton) Grated rind one orange, packet trifle sponges, or whatever cheapo sponge you can find. Take four dessert bowls (I use brandy glasses)- line the bottom with the 1 and half of the trifle sponges. Take half the orange juice and pour equal amounts over the sponges. Whip cream until stiff and then gradually, using a knife, fold in remaining orange a wee bit a time. Pour mixture over the sponges equal amounts per bowl (more or less). Sprinkle grated orange rind on top. Pop in the fridge for at least an hour but can be more if you want to prepare early. YUM!
Forgot to say - i have never managed to curdle the cream doing this (and I bet I am a worse cook than you) however just in case cream should be cold from the fridge. Good luck!
Fresh fruit salad. As many different fruits as you want, in apple juice, with maybe a touch of cointreau, or creme de cassis, for that adult touch. Nice and refreshing after a roast meat dish.
Make them think you are a top chef by trying Creme Brulee. make it fruity by adding a slice of your chosen fruit to the custard underl layer. Try a google search for Creme Brulee for the recipe. Hope it goes well

Thank you for all your suggestions, spoilt for choise now. I must admit, I have got a bit behind with my entertaining so maybe I will try these recipes and catch up with everyone. Thanks again
