Tasty easy lunches.

Hi all,
I work 24/7 shifts and have to bring all food in with me as we don't get to leave the building. Does anyone have any suggestions for lunch type food, easy to prepare, maybe be frozen and reheated, cold pasta type salads, noodles...
Any ideas would be greatfully received.

For more on marking an answer as the "Best Answer", please visit our FAQ.My current fave is couscous with roasted vegetables - chop onions, red and yellow peppers, aubergine and courgettes, sprinkle with olive oil and roast for 30 mins in a hot oven.
Make the couscous - I like to use the Ainsley Harriot Moroccan Medley one as it is nicely spiced but you can use plain. Mix together et voila! This lasts a couple of days in the firdge, I like it cold but it would microwave well

When you make a meal at home - if you make extra portions of everything - then pop one serving of each dish into the freezer - you will have a home cooked frozen dinner to microwave at work. This works with almost all meats, vegetables and rices.
Also, if you have frozen salmon - you can cover it with water or wine & herbs in a microwave container and poach it in the microwave. I also like to do it that way and allow it to cool - crumble it - add chopped onion, garlic, mayo & olive oil. Makes a great wrap - even better after being in the fridge overnight.
