BBQ vegetables

Sorry guys, still with the camping... but I've decided to do a meat BBQ for the first night and take loads of vegetables for lunch and the second night.

But apart from meat and veg kebabs, can't really can't think of anything exciting to do with them... can I just stick them on skewers and stick them in the fire?

Should I make an oil-based marinade in a tub to dip keep them in until needed, or will they soak too much oil?

I'l let you know what I did.

Veggie kebabs with honey and soy are the business. Don't use oil on a barbee.

Sounds good... but why not oil on bbq? I though it would help aubergine, mushrooms and courgetts or they would dry up, shrivel and burn.

put a bit of oil on aubergine, mushrooms and courgette, but let it soak in. If you use too much you will have flames 2 feet high and burn all your food.
Finely cut or shred some carrots, swede and parsnip, (or on their own) wrap in foil with some butter and put on the BBQ. Add a bit of white wine if you want for extra flavour.
Red peppers do well also. Cut into quarters, clean the white bits off. BBQ inside side down first, then turn and put some stilton inside them to melt (works the same with large mushrooms)
Corn on the cob - parboil then just place on the BBQ to brown
Same for Asparagus

quarter some onions, leaving skin on, brush with a bit of oil and place on BBQ, alternatively, skin, chop into large chunks, wrap in foil and put on BBQ

And do make a pudding - best has to be bananas in foil - give them 20 mins or so in the skin wrapped in foil. Ready when they go black. Split the skin, push in some dark chocolate, double cream, rum / liqueur and a dash of lime.
