Crispy Chicken perhaps!!

I prefer meat being overcooked than undercooked. Consequently I always go over the recommended time.
This evening, I put a chicken in the oven as an item to be eaten as cold meat over the next few days. I intended it to come-out at 8p.m.(Half hour over packaged time)..Forgot and took it out of oven at 9.30.
It looks great and I've no doubt it will be so.
What do you say.? Stupid chap perhaps.........Ron

Should have realised that we risked getting the bird for failing to use the slowcooker. It was a rather large chicken and something of a tight fit for the pot. Hence the reason for our misdemeanour.
Figi...Will post a line this evening, after we've had our late afternoon lunch, and tell you how dry the meat was. Hopefully it will taste good with an additional dry item....red wine of course.
bednobs....Your method is similar to using a slow cooker and I bet the meat's really tender. You may know it was shaneystar2 who introduced us to a slowcooker and we still applaud her for having done so.

Good evening Figi.......The chicken was as you forecasted, very dry; but still very tasty along with leaf salad, cold potatoes and cooked beetroot: accompanied with a big bottle of 'Chateau Sainsbury's' vin plonk 2007.( Plastic perfection)
The disapointing part of our meal was the homemade bread; which was very crusty on the outside but too doughy on the inside. Can't understand it. First bread failure for may years. Must have had something to do with putting too much water or oil in the preparation process of the ciabatta bread.
Anyway, lets all laugh and agree that the cook is far from being a spring chicken and this weekend he certainly lost his loaf.!!

P.S. You can all come along to Gower for a chicken sandwich. It's about to rain here and the bread is a bit moist.!!
