Low fat hard cheese

Can anyone recommend a lower fat hard cheese that when toasted, does not end up looking and tasting like something you could re-sole your shoes with! Thank you.

I've recently fallen in love with "Mini Chol" cheese - a soy cheese that you can slice/grate and melts really well. The best one I've tried so far is imported from Sweden. I hasten to add that I detest all other soy cheeses For the extra bite, combine a little of your favourite normal cheese..

Thanks Janetex, I shall look out for it. Will I be able to get it at most supermarkets or more specialised places?
Not sure about there. Specialty gourmet grocers who stock organic fruit/veg, unusual fresh herbs/flowers, etc & European delicacy type shops.
Weight Watchers do a low fat chedder. We get ours from ASDA.

Thanks rinkytink. Do you know if it 'melts' like full fat cheddar or does it go rubbery?
Well....
Mrs Rinkytink has it on toast, under the grill, and it goes all nice and brown and crispy on top. She's pretty fussy with things like that so I would think that it's alright. I sometimes have it in me toasties and I like it - but I'm not really a connoisseur of cheese.
