Chinese chicken sandwich filling!

You know the sort of thing- little cubes of chicken in kind of pink or red mayonnaise. Any idea how I can make it?

you can buy flavoured chicken in most supermarkets -I'm pretty sure both Asda and Sainsbury's do a chinese flavoured chicken. Then you could just chop it up and mix it in with some mayonnaise? I think it's the flavoured coating on the chicken that turns the mayonnaise pink.
never tried it but i know the stuff you mean at a guess get
some chicken cube it marinate in some five spice powder bit of garlic salt and pepper for a couple of house then grill or fry it. leave to cool then mix with mayo
10 years on and I've just come across this as I came across the same dilemma. I've made it tonight and think I've solved it.

I used sweet chilli Bernard Matthews turkey breast chunks (pink colour to them).

Mixed with mayonnaise, 5 spice, a bit of ketchup, garlic powder and salt and pepper.

I imagine you've either sorted this or forgotten about this but just in case ...
Go to your local butchers and ask for some chinese chicken spice (pink in colour) mine gave me a large tub for £2
