I bought a whole side of fresh salmon, I ve cut it into small individual portions, and frozen them in the freezer. Ive cooked one by poaching it from frozen,but because it took a lot longer to cook than fresh, I dont think it tasted as good. Is it safe to defrost it in the fridge, and then poach it , or does it have to be cooked from frozen. The salmon hadnt been frozen before I bought it. Thanks.
Perfectly safe to defrost it in the fridge overnight... as long as there wasn't any real delay in you freezing it in the first place.
I always defrost all meat/fowl/fish before cooking basically because, right or wrong, that was what I was told to do by my folks.
Fish that has been frozen doesn't taste as good as fresh fish wether you cook it from frozen or cook it from fresh then frozen.
I've found that by defrosting the fish lightly and cooking it in lemon juice and pepper wrapped in foil and popped into a hot oven, it's really lovely. This goes for all fish.
